Here is the "Luscious Lemon Squares" recipe:

    Ingredients:
        1 small lemon
        7 tablespoons unsalted butter, softened
        1 cup plus 2 tablespoons all-purpose flour
        1/4 cup plus 1 tablespoon confectioners' sugar
        2 eggs
        1 cup granulated sugar
        1/2 teaspoon baking powder
        Big pinch of salt

    Instructions:

        1) Preheat the oven to 350 degrees.  Grate the zest from the lemon (if you use a lemon zester, you may want to chop the small strips into bits; otherwise, use the small holes of the box grater) and squeeze enough juice from the lemon for 2 tablespoons.  Set the zest and juice aside.
        
        2) Put the butter in the 8-inch square pan.  Put the pan in the oven for about 5 minutes until the butter melts.  Put the pan on a cooling rack and let it cool about 5 minutes.  Sprinkle the 1 cup flour and 1/4 cup confectioners sugar over the melted butter.  Mix the ingredients with a fork to form a dough and press over the bottom of the pan.  Return to the oven and bake for 15 minutes.

        3) MEANWHILE, put the eggs and granulated sugar in a medium mixing bowl. Beat with electric mixer set on medium until well blended.  With the mixer set on low speed, beat in the remaining 2 tablespoons flour, the lemon zest, the 2 tablespoons lemon juice, baking powder, and salt until well combined.
        
4) When the crust is done put the pan on a cooling rack.  Spread the topping over the hot crust (use a spatula if necessary).  Return to the oven and bake until pale brown, 20 to 25 minutes.  Let the pan cool on a rack.
        
5) Put the 1 tablespoon confectioners' sugar in a sieve.  Press the sugar through the sieve over the top of the cookie.  Then cut into 16 squares.
